Mint, Parsley, and Basil Pesto Pasta with Marinaded Tofu and Veggies

Well, lunch-clubbers, here is your chance to tell me what you think of my edible creation.

  1. I liked it, but I thought the pesto was a little gritty or something. I think maybe some more olive oil would have helped out. I loved the veggies and the tofu. I thought that the sides really added to the dish.

  2. Friggin loved it! For seriouses! Please please please make this again. I also really liked the mushrooms. Agree with Lynn on the pesto.
